Maharishi University of Management Eco-Fair to focus on foods; famed cookbook author author to speak

Savoring the flavor and saving the Earth are twin themes of this year's Maharishi University of Management Eco-Fair, which is highlighting 'artisanal foods' and the Slow Food Movement, with famed author Deborah Madison leading off the events. . . .
The event will take place at the Fairfield Arts & Convention Center on Saturday and Sunday, May 3-4. Saturday evening will feature . . . 'a creative expression of sustainability principles which help us maintain a nurturing relationship with the Earth.'
There will also be vendor booths with a wide range of eco-conscious offerings.
In addition to Ms. Madison, other speakers on Saturday, May 3, will include:
* Kurt Michael Friese, proprietor and chef of Iowa City's Devotay. He is also a prolific author and editor, as well as a member of the board of directors of Slow Food USA. His book Slow Food in the Heartland: A Cook's Journey will be published in August by Ice Cube Press.
* Sherri Brooks Vinton, the New York/New Jersey Regional Governor of Slow Food USA and coauthor of Real Food Revival.
* A panel that will include Detra Dettman, whose expertise is in resource conservation and the use of local foods, and Wendy Wassermann, editor of Edible Iowa River Valley, a magazine distributed in eastern and central Iowa.
* Riki Saltzman, Iowa Arts Council Folklife Coordinator. She will offer Iowa place-based food stories and the traditions of foods.
On Sunday, May 4, the Eco-Fair will host a variety of hands-on workshops.
Ms. Madison is a leader in the area of vegetarian cooking, and is the author of Vegetarian Cooking for Everyone and The Savory Way, both of which were named the Julia Child Cookbook of the Year.
